The automatic boost pause that kicks in during maintenance only applies to short-term boosts like the ones for the Spell Factory, Heroes and both Dark and regular Barracks. Resource collectors will not pause, as even during maintenance they will happily continue doing what they're supposed to do: churn out valuable resources for you to collect once the maintenance break is over.
